Autumn Apple Cobbler Recipe

The perfect Thanksgiving dessert, Chef Reylon’s delicious Autumn Apple Cobbler uses apples pulled directly from the enormous 100-year old heritage apple trees in our Chef’s Garden. A true farm to table dessert!
Apple Filling:
- 6 Green Apples
- ¾ Cup Sultana Raisins
- ½ Cup – Diced Dried Apricot
- 1ea Lemon Zest
- 1ea Lemon Juice
- 6 tbsp – Butter
- ½ Cup Light Brown Sugar
- ½ tsp Ground Cinnamon
- ½ tsp Ground Nutmeg
- ½ tsp Ground Clove
- 1 cup – Apple Juice
- Salt to taste
Preparation Instructions
Apple Filling: Combine raisins, diced apricots, lemon zest & lemon juice into a food processor and pulse to a coarse paste, melt butter in a heavy bottomed sauce pot adding paste, sugar, spices, and apple juice. Simmer until all ingredients are incorporated. Add apples and cook until fork tender. Pack into an oven-ready vessel of your choice and top with granola. Heat for 10 minutes at 225F, remove and serve.
